Huckleberry Pie Recipe:

Ingredients: Filling:

  • 4 cups fresh huckleberries

  • 1 cup granulated sugar

  • 1/4 cup cornstarch

  • 1 tablespoon lemon juice

  • Zest of 1 lemon

  • 1/4 teaspoon salt


For the Pie Crust:

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon granulated sugar

  • 1 cup cold unsalted butter, cubed

  • 6-8 tablespoons ice water


Instructions:

For the Pie Crust:

  1. In a large mixing bowl, whisk together the flour, salt, and sugar.

  2. Add the cold butter cubes to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

  3. Gradually add ice water, 1 tablespoon at a time, and mix until the dough comes together. Be careful not to overwork the dough.

  4. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.


For the Filling:

  1. In a large bowl, gently combine the huckleberries, granulated sugar, cornstarch, lemon juice, lemon zest, and salt. Let the mixture sit for about 15 minutes to allow the flavors to meld.


Assembling the Pie:

  1. Preheat the oven to 375°F (190°C).

  2. On a floured surface, roll out one of the chilled pie crust disks into a circle that's about 12 inches in diameter.

  3. Carefully transfer the rolled-out crust to a 9-inch pie dish. Trim any excess dough hanging over the edges.

  4. Pour the huckleberry filling into the pie crust.

  5. Roll out the second pie crust disk and use it to cover the filling. You can create a lattice pattern or a full crust, as desired.

  6. Trim and crimp the edges of the pie crust to seal the pie.

  7. Optional: Brush the top crust with a little milk or beaten egg for a golden finish.

  8. Place the pie on a baking sheet to catch any drips and bake in the preheated oven for about 45-50 minutes, or until the crust is golden brown and the filling is bubbly.

  9. If the edges of the crust start to brown too quickly, you can cover them with aluminum foil.

  10. Once baked, remove the pie from the oven and let it cool on a wire rack before serving. This allows the filling to set.
