Gooseberry Jam Recipe

2. Gooseberry Jam:

Ingredients:

  • 4 cups gooseberries, topped and tailed

  • 2 cups granulated sugar (adjust based on the sweetness of gooseberries)

  • 1 tablespoon lemon juice

  • 1 teaspoon lemon zest (optional)

Instructions:

  1. In a large pot, combine the gooseberries, granulated sugar, lemon juice, and lemon zest (if using). Let the mixture sit for about 1 hour, allowing the sugar to dissolve and the flavors to meld.

  2. Place the pot over medium heat and bring the mixture to a gentle simmer. Cook, stirring occasionally, until the gooseberries break down and the mixture thickens. This can take about 20-30 minutes.

  3. Use a potato masher or spoon to crush the gooseberries to your desired consistency.

  4. Remove the pot from the heat once the jam has reached the desired thickness.

  5. Transfer the jam to sterilized jars, leaving a little space at the top. Seal the jars with sterilized lids and bands.

  6. Process the jars in a boiling water bath canner for 10-15 minutes to ensure proper sealing.

  7. Allow the jars to cool before labeling and storing them in a cool, dark place.
